I know. It's been a whole week since I posted, but I've REALLY been busy. We went out of town for a day to Joel's parent's house, ripped up the carpet in the diningroom, babysat, had a nail appointment, etc. Yes, I lead such an exciting life.
Anyway, weigh-in was this morning and I've lost two more pounds! I'm still trying to figure out how to reward myself. I know I'm not supposed to reward myself with food, but all the other rewards I can think of...well, I already do them! I've read articles about getting pedicures (done), buying something special (I honestly can't think of a single thing that I want and don't have), etc. One suggestion was to get a maid for a day. This would be a total waste of money/time because I would follow her around re-cleaning everything. Plus, we had maids when I was growing up and every single one of them stole from us. Nope, no maid is coming here.
My Christmas prep is still coming along on schedule. Craft Days (every Tuesday) help. Getting together with friends is a huge boost to my sanity!
Tonight for dinner:
Grilled Chicken & Creamy Corn
2 Tbsp olive oil
1 tsp smoked paprika
3 fresh ears of sweet corn
4 skinless, boneless chicken breast halves
1/3 cup sour cream
Milk
1/4 c shredded fresh basil
In a small bowl combine oil and paprika. Brush corn and chicken with oil mixture. Lightly sprinkle salt and pepper. Grill directly over medium coals for 12 to 15 minutes or until chicken is no longer pink (170F), turning once.
Carefully cut kernels from cob by firmly holding the corn at the top (using a kitchen towel to grip, if necessary) and slicing downward with a sharp knife. Transfer to bowl; stir in sour cream. Season with additional salt and pepper. Stir in milk to desired creaminess. Slice chicken breasts. Serve with corn; sprinkle shredded basil.
Serves 4 with each serving: 309 calories, 13g fat (4g sat. fat), 89mg chol, 238mg sodium, 14g carb, 2g fiber, 36g protein. WW points: 7.
