My Two Sisters

My two sisters are visiting from Atlanta. We have a brother, but he chooses to be uninvolved in our lives. Enough about him...

Teri and Sheri arrived yesterday. They flew here (thanks Bob!). Neither of them like to fly. Both decided they needed a little help. Teri chose Vodka. Sheri chose medication (directed and prescribed by her physician). Teri was recognizable when they landed. I can't say the same for Sheri. We stopped at The Summer Kitchen Cafe on the way home. Sheri actually fell asleep while eating. I have never seen anything like this. Sheri also feel asleep while riding in the car, talking, standing and doing just about everything else she attempted yesterday.

Today she announced that anything said yesterday didn't count. I quickly realized exactly how little time she had spent actually awake. She remembered NOTHING we had talked about yesterday.

We spent this morning shopping (they HAD to see Nobbies) then we went to China Buffet for lunch. Afterward my granddaughter Scarlet came over. Neither of my sisters had met her before. They agreed that she is the perfect child.

As with any story, there is more than one side. Although I will be continuing the story of their trip over the next few days, I encourage y'all to go to their blogs and read what they have to say about the trip. You will see how stifled my creativity has become what with the medication I am taking.

Stuffed Peppers

8 large green bell peppers

filling:
1 pound 95% lean ground beef (I use venison)
1 medium onion, chopped
1 Tbsp chili powder
1/4 tsp black pepper
1/2 tsp salt
4 c cooked brown rice
1 c shredded non-fat or reducd-fat cheddar cheese

sauce:
32 oz tomato sauce (I use 40oz to make it go further)
1 Tbsp chili powder
1/4 tsp salt

1. Place meat in large skillet and cook over medium until meat is no longer pink. Drain. Stir in onion, chili powder, pepper and salt then cook a few minutes until onion is tender. Add a small amount of water if your skillet gets too dry. Remove from heat and stir in the rice then the cheese.
2. Cut tops off peppers and remove the seeds and membranes. Divide filling among the peppersand replace the pepper tops, if desired.
3. Combine all sauce ingredients in a large bowl and stir to mix. Place peppers uprght in 9x13 pan coated with cooking spray and pour sauce around and over the peppers. Cover with foil and bake at 350 for 1 hour or until peppers are tender. Serve hot.

Last day of school

Our second son goes to his last day of school today. Yes, he's only 17, but he skipped a grade so he is graduating this year. It has arrived way too fast. Graduation is Saturday. There is so much to do between now and then that the next few days should fly by also. Today is the Senior Barbecue, tomorrow is Baccalaureate, Friday we'll be getting ready for his reception. I still haven't decided what I'm wearing on Saturday!

Having a busy month

Our middle son, Adam, is graduating next week. He and our youngest son, Carl, are very active in school so we are having an unusually busy month. Wednesday was Theatre Awards Night. Carl won "Best Small Group" for playing one of the "Wickersham Brothers" in "Seussical". He was very excited since they beat out "Thing 1 and Thing 2".
Last night was Senior Awards Night. Adam got Presidential Excellence Award, a cord to wear at graduation for National Honors Society, recognition for his Regent's Scholarship to University of Nebraska - Omaha and he was on the Honor Roll. If it sounds like I'm bragging, I am! They are my kids and I'm very proud of their accomplishments.
Tonight is Drill Team Awards Night for Adam. Monday is Band Awards Night for Carl and Adam.
Tuesday I have an appointment at the eye doctor (just a check-up) then Joel and I give blood.
Wednesday is the last day of school for Seniors and the Senior Barbecue.
Just giving y'all an idea of how busy the next week will be, but trust me that the rest of the month is about the same including Baccalaureate and Graduation!
I'm still working on my weightloss. Tonight we are having shrimp and vegetable stirfry and rice.

Holy Crap! Has it been 8 months since I posted???

Yeah, I hit a plateau way back in September and then the holidays came around, but no excuse to not post in 8 months!

Over the holidays I gained 1 pound. Not bad considering all the temptations. I'm on the wagon and becoming more healthy everyday. I still am not exercising nearly enough, but am making an effort. I even went to the pool!!! It had been many years since I had been in a swimsuit, but the water felt great and I'll continue going back at least until I need a smaller size swimsuit.

We have a very busy May this year. Our second son is graduating (where did the time go?) and there are several awards nights, events, programs, etc. to attend. We have TWO nights this whole month that there isn't something scheduled.

I'm going to close for now, but promise to be better about posting. Think positive thoughts and we'll all be wearing bikinis before long!
